September 4, 2006, There is not a taste that can compare to the freshness of summer vegetables, especially tomatoes. You just cannot get a good tasting, vine ripened tomato until midsummer in the northeast. They often try to truck tomatoes up from the south in spring but by the time they get to the table they have lost much of their flavor. We are blessed with a number of local truck farmers and roadside stands in Cape May during the summer. When the local tomatoes are in season, the tomato with fresh mozzarella and basil dressed with extra virgin olive oil and balsamic vinegar becomes a staple for our summer meals. We sometimes change the presentation, the variety of tomatoes, select buffalo mozzarella when available, and add hot homemade bread to soak up the extra dressing. All in all, a basic dish. Fred May
